Healthier Mexican Pizzas

Yup... still trying to keep things lighter... and still completely addicted to Mexican food.

I was going to make tostadas with some leftover Smoky Mexican Chicken. Then Taco Bell Mexican Pizza popped into my head. So I changed it up!

They are so easy and definitely lightened up!

Healthier Mexican Pizza
6 flour tortillas, 6 inch
3/4 C refried beans
1 1/2 C Smoky Mexican Chicken
3/4 C reduced fat Mexican cheese, shredded
6 TBLS smooth taco sauce
3 TBLS scallions, sliced
12 jalapeno slices

Preheat oven to 400F
Place tortillas on a large baking sheet.

Bake tortillas until golden & crisp.

Push down any bubbles that might pop up on the tortillas to keep them flat.

Spread 1/4 C refried beans on half of the tortillas.

Then spread 1/2 C Smoky Mexican Chicken over each tortilla with beans.

Cover chicken and bean covered tortillas with remaining crisp tortillas.

Spread 2 TBLS taco sauce on pizza.

Evenly spread 1/4 cup shredded cheese on each pizza.

Add scallions.

And jalapenos.

Bake until cheese is melty.

Let it set for 3 - 5 minutes, then cut into quarters & enjoy!!

You can top these with your favorite toppings. This is just what I had on hand tonight. You can add black olives, diced tomatoes, diced red onions, cilantro, or for some cool fresh crunch, sprinkle on some crispy shredded lettuce when it comes out of the oven.

How did this measure up against Taco Bell Mexican Pizza?

Taco Bell Mexican Pizza - 1 pizza
Calories: 530
Total Fat: 30g
Total Carbs: 46g
Protein: 20g

Healthier Mexican Pizza - 1 pizza
Calories: 485 - 45 calories less
Total Fat: 12g - 18g fat less
Total Carbs: 43g - 3g carbs less
Protein: 47g - 27g lean protein more (more than twice as much!)

Not too shabby!!!

I love making mini pizzas at home! So much nicer than the greasy stuff from the local pizza joint.

What a great idea! I love Mexican Pizza from Taco Bell and this seems like a much healthier version!

I could eat those for breakfast!This reminds me of something my mom used to do. Yes, we always had english muffin pizzas but she also used to use pocketless pitas. They are thicker (obviously lol) than the tortillas so more like a pizza dough. Although, I never had mexican pizza so it's probably supposed to be thin and crispy but it's just another idea to try!

Oh no! I didn't make the tortillas... I just baked store bought ones instead of frying them.

those look sooooo delicious right now, and no that is not because I haven't eaten since 4:30 and it is now 10:40 and I took a 45 minute walk. It is because it looks so good and I LOVE mexican food.

I will try these with black beans for a slight change. Mmm, mmm, good.

I used to make Mexican pizzas all the time when my kids were still at home. I will have to make these next time I am visiting with one of them. Thanks for reminding me of how much I like these.
