Mashed Potato Tacos

This recipe showed up in my inbox from Allrecipes.com.

I didn't really follow the recipe... so I guess just the idea came from Allrecipes.

Anyway... this is perfect for leftover mashed potatoes.

There are no exact measurements.

Mashed Potato Tacos
Mashed Potatoes
Green chiles, diced
Grilled corn
Pepperjack cheese, shredded
Corn tortillas or taco shells
Taco sauce

I made creamy yukon gold mashed potatoes. Then stirred in diced green chiles, grilled corn kernels, and lots of shredded pepperjack cheese.

Then into tortillas if you like them soft or taco shells if you like them crunchy.

I made pretty much almost every kind.

Stir corn kernels & green chiles into your hot mashed potatoes...
And you stir whatever you like into your mashies... other leftover veggies, meat, whatever...

Add some shredded pepperjack cheese, or whatever cheese you like.

Mix well.

Now into your favorite taco shell.

If you put some wadded up foil inside your taco shells when you heat them, they don't close up.

But my FAVORITE way to have these was Mashed Potato Rolled Tacos!

Into some oil heated to 350F.

Turn.

Drain.

Top with more cheese and DEVOUR!

All the versions were tasty... but I could eat my weight in Mashed Potato Rolled Tacos!

So next time you have leftover mashies, make tacos! Don't even wait for leftovers, just make some and make tacos! And I'll bet mashed sweet potatoes would be just as good... or any mashed veggies! Oooohhhhhhh.... mashed celery root & parsnip tacos?? I think I'm gonna add those to the list of things to make!!

Seriously! Make tacos!

Chicken Pinto & Corn Enchiladas

Enchiladas, like quesadillas are so versatile.

You can roll up whatever fillings you want in them.

For these, I used the leftovers from my Pinto Bean & Corn Chicken Quesadillas.

First of all... if I'm using flour tortillas are they still enchiladas?

I have no idea. I usually use corn tortillas, but I had a bunch of small flour tortillas to use up. So that's what I used!

No recipe here either, just using up leftovers.

To start, pull out your leftovers.

Shredded chicken and beans, corn and green chiles.

Toss them together.

A big bowl of shredded colby & pepperjack cheese.

Coat the bottom of a baking dish with enchilada sauce.

Homemade or store bought, whatever you have.

Now it's time to assemble the enchiladas.

Grab a small flour tortilla and sprinkle a little shredded cheese down the center.

Then top the cheese with the chicken mixture.

Roll it up.

Place it seam side down in the baking dish.

Do that until the pan is full or you run out of fillings.

Now cover them with more enchilada sauce.

And top with more shredded cheese.

That's it.

Now bake for about 30 minutes at 350F, until cheese is all melty and everything is heated through.

Curry & Chips Omelet

Let's say you were at Piper's Pub watching the USA vs Algeria football (soccer) match. You ordered some Curry & Chips to snack on, but were too wrapped up in the game to eat them. At the very end of the game, in stoppage time, Donovan swoops in and kicks the ball into the net for a game winning goal for USA! Woohooo!!!

Yikes! You told the boss you'd be in by noon and it's noon now. You're gonna be a little late already so you ask the bartender for a to-go box to take your Curry & Chips home for later.

Long afternoon at work, but all's well because USA is on to the second round!

It's so hot and you need a dinner plan. You have some leftover Curry & Chips from Piper's Pub, but that's not really enough for dinner... or is it?

How about a Curry & Chips Omelet?

Get out your leftovers from Piper's.

Pour the curry into a small sauce pan to reheat it. Or you could do it in the microwave.

Whisk up some eggs with a little milk and salt & pepper; then pour them into a hot non-stick skillet.

Foraging... can't have an omelet without cheese. Well, I guess you can, but I don't want one like that!

Break up your leftover chips and put them on top of the cheese

Turkey a la King

Turkey a la King is something I had never tried until I moved in with Jon. While wading through Thanksgiving leftovers one year, Jon suggested I make Turkey a la King. His mother used to make it with turkey leftovers. And he really didn't want to look at another turkey sandwich or turkey enchilada.

Ok then! Turkey a la King it is! (or was... I made this right after Christmas)

Turkey a la King
1 1/2 - 2 C cooked turkey, diced or shredded
8 oz mushrooms, sliced
1/2 small shallot, diced
1/2 C peas
small jar pimento, diced
Other leftover veggies?
3 TBLS butter
3 TBLS flour
1 1/2 C turkey stock
1/4 C dry white wine
1/4 C heavy cream
1 tsp poultry seasoning
salt & pepper
Puff Pastry

Cut Puff Pastry into squares and cook according to directions on box.
Saute mushrooms and shallots in butter until golden.
Sprinkle in flour and cook until flour is starting to brown.
Whisk in turkey stock, wine and cream. Cook a few minutes until mixture starts to thicken.
Add turkey, poultry seasoning, peas, pimento and whatever other leftover veggies you might want to throw in.
Cook until heated through. Add salt and pepper to taste.
Serve over puff pastry and top with more puff pastry.

Bake puff pastry according to directions.

Grab your leftovers.

Turkey and fresh spinach were the only leftovers I was working with this time.

Saute mushrooms & shallots in butter.

Sprinkle in flour.

Continue cooking until it just starts to brown.

Whisk in stock, wine and cream.

Add leftover turkey.

Poultry seasoning.

Handful of spinach.

Some frozen peas.

A little pimento.

Add salt and pepper to taste and that's it!

Serve over puff pastry.

You don't need to wait for the holidays to make this. It's also another fast easy meal you can make with a rotisserie chicken!

This comes together wicked fast and it's so easy and tasty!

It's perfect for a satisfying dinner on a busy week night.

Hmmm... typing this up made me want to make it again!
