Margarita Jello Shots & Margarita Cake

These are always a BIG hit at my Cinco de Mayo parties and they're so easy to make!

They look like little cups of Nyquil!

This is all you need!

Margarita Jello Shots
2 cups boiling water
1 box lime jello
1 1/3 C tequila
2/3 C triple sec

Dissolve jello in boiling water.
Stir in tequila & triple sec.
Pour into little plastic cups.
Refrigerate until completely set.
Enjoy!

I make this in my big 4 cup measuring cup, because it's easy to pour into little cups.

Completely dissolve jello in boiling water.

Add tequila & triple sec.

Pour into little plastic cups.

I put the little cups on a cookie sheet incase I spilled.

Now into the fridge.
I put them in a Tupperware container to help keep them safe from spillage in the fridge.

Oh yeah!! It's Margarita Jello Shot time!!!

I had to loosen them with a knife to be able to suck them out of the cup.
A little bit of work... but they're always fun!!

And on to the Margarita Cake!!

I actually posted this a while back. But I made them into cupcakes and frosted them.

Margarita Cake
Cake:
1 (18.25 ounce) package lemon cake mix
1 (3.4 ounce) package instant vanilla pudding mix
4 eggs
1/2 cup vegetable oil
2/3 cup water
1/4 cup lime juice
1/4 cup tequila
2 tablespoons triple sec liqueur
zest of one small lime

Preheat oven to 350 degrees.
Prepare Cupcake pans... or grease and flour a 10 inch bundt pan
In a large bowl combine cake mix, pudding mix, eggs, oil, water, lime juice 1/4 cup tequila, 2 tablespoons triple sec and lime zest.
Beat for 2 minutes.
5. Spoon into cupcake cups or pour batter into prepared pan
6. Bake in the preheated oven for 12 to 17 minutes for cupcakes or 26 to 31 minutes for 13 x 9 pan, or until a toothpick inserted into the center comes out clean.
Cool in pan for 10 minutes; remove to rack and pour glaze over cupcakes or cake while still warm.

Glaze
1 cup confectioners' sugar
1 tablespoon tequila
2 tablespoons triple sec liqueur
2 tablespoons lime juice
To make the glaze:
In a small bowl, combine confectioners' sugar with 1 tablespoon tequila, 2 tablespoons triple sec and 2 tablespoons lime juice. Mix until smooth.

Preheat oven to 350F

Beat all ingredients together.

Pour into greased 13x9 pan.

Bake 26 to 31 minutes or until toothpick comes out clean.

Cool in pan 10 minutes. Remove to rack and glaze.

I made the glaze in a measuring cup that I could easily pour from to make glazing easier.

Whisk up the glaze.

Prick cake all over with a fork or toothpick and cover with glaze.

Pour glaze evenly over entire cake.

This cake is soooo moist and delicious!

  7. It does have a margarita flavor... but not really a liquor taste. My 16 year old said it has a tang to it!

  9. Jello shots are a staple at my superbowl and fourth of july parties. Love them and they are so versatile, so many fun colors.

    now that cake is beyond what I would call perfect. LOVE it, Have got to make it. I will make it. Thanks for sharing this one.

  11. ok..how sad is this...I have never had a jello shot! They weren't around when I was doing the party rounds (waaaaaaay back when). Of course now that I know they come in "margarita" form....its on my list!
