BBQ'd Burritos

Just a quick one! Some of my BakeSpace Buddies were curious about my dinner plan tonight.

I made BBQ'd Beef Burritos.

Before I moved down here, Jon's old roommate Kevin used to cook quite often when I visited. On one of my visits, he fried up some potatoes with onions and peppers mixed it up with shredded chicken and cheese, and rolled it into burritos. Pretty standard right? But then he brushed them with BBQ sauce and put them under the broiler!

They were delicious! I've never been able to make them as good as Kevin. I really don't remember everything that went into them.

I've only ever tried with potatoes & shredded chicken, but tonight I had some seasoned ground beef to use up that I had left over from my Cinco de Mayo party over the weekend.

Since I made enchiladas out of the left over carnitas last night... I decided I should change up the flavors a bit. So I tried BBQ burritos with beef tonight.

Roll up the burrito with whatever fillings you want.

Tonight I used taco-seasoned ground beef, green chile-lime refried beans, and shredded colby-jack. Tawny and Jon also had some nacho cheese in theirs.

A little bit of beef broth is perfect for reheating the meat.

Then brush them with whatever BBQ sauce you have on hand.

You can put them under the broiler, on a medium/cool grill or I put them into my Foreman.

Sprinkle with more shredded cheese and enjoy!

They're even better if you brush them with warm BBQ sauce again when they come off the grill... but I totally forgot!

So if you want to give your Mexican/TexMex a twist... try BBQ sauce!

  7. mmm....all that melted cheesy yumminess. my daughter doesn't like bbq sauce (she's weird sometimes...doesn't even like mac n cheese) so I don't get to use bbq sauce as often as I'd like. I'll have to keep this in mind for the next time she's not home for dinner :)

  8. One of my best blog friends makes a bbq chicken quesadilla with cheesy rice that I always thought sounded good. I guess people do like to switch up their Mex with bbq once in a while. Looks great Spryte!
